The open-fire grill restaurant EMBERS presents three exclusive festive courses available for only three days at the end of the year.

EMBERS’ culinary philosophy is rooted in open-fire grilling, a technique that enhances the natural flavors of each ingredient with the intense heat of binchotan charcoal.

By delicately controlling temperature, smoke, and the unique characteristics of each wood, EMBERS goes beyond simple grilling to deliver deep, multidimensional flavors.

This festive season, each course highlights its own character through a variety of fire-based cooking techniques—charcoal grilling, smoking, and cedar-plank grilling.

Different aromas and heat profiles come together to create the signature EMBERS experience.

Festive Lunch Course A
WELCOME DRINK – Laurent-Perrier Champagne
FIRST SPARK (Small Bites) – Amuse-bouche
WARM HOUSE-BAKED BREAD – Oven-baked EMBERS bread
APPETIZERS – Charcoal-kissed fish with caviar
SOUP – Charcoal-infused onion soup
MIDDLE – Cedar-plank grilled seafood: lobster, king crab, scallops
MAIN COURSE (Choice of) – Charcoal-grilled trio of Korean beef (Tenderloin 1++, Ribeye 1++, Striploin 1++) or Dry-aged U.S. T-bone steak (Beef – U.S.)
AFTER MAIN – Spicy caviar noodles, tomato, cucumber, salted pepper
DESSERT – Yogurt glacé with seasonal fruits, cream espuma

Festive Lunch Course B

SOUP – Korean beef striploin slices with charcoal-grilled onion soup
MIDDLE – Charcoal-grilled king crab & scallops with Ossetra caviar (Scallops – Korea)
MAIN COURSE – 20-day aged Korean beef tenderloin (female) and 35-day U.S. Prime dry-aged striploin, served with potato slices, mashed potatoes, broccolini, balsamic jus, and cranberry
DESSERT – Strawberry Vacherin (strawberry yuzu confit, meringue, vanilla ice cream); Coffee or Pullman Signature Tea
